I miss having garbanzo beans in my diet but more than that I REALLY miss hummus. Therefore, I set out to figure out a way to dip carrots or kale chips into a creamy, delcious dip and came up with this super easy recipe. For easier digestion, I roast a few carrots in the oven and dip away.
Add the following to a food processor (I use a small processor for this dish):
– 1 large yellow squash, chopped
– 2 tbsp organic tahini
– 1/4 tsp salt
– 1 tsp lemon juice
– 1 tsp tumeric powder
– 1/8 tsp dill
– 1 tsp coconut oil
– 1/2 tsp garlic infused oil (optional)
– 4 sliced green olives (optional)
Chop and grind until smooth.
