With meat allowed on SIBO diets, juicy burgers might not be hard to come by as long as they are bun-less, but this is a healthier option that tastes terrific. The squash keeps the meat moist and the herbs give the burgers a flavorful kick.
Coat large frying pan with thin layer of extra virgin olive oil or avocado oil. In a food processor, grind:
– 1 chopped, small yellow squash
– 1 tsp dried oregano
– 1/2 tsp dill weed
Add the mixture to one package of lean ground turkey (I like 93% lean, kosher turkey – see meals main page). Put a little olive oil on your hands and mix everything together by hand. Form large balls and press into pan.
Cook on medium high heat for 6-8 minutes on each side until cooked all the way through. This should make 5-6 burgers depending on the size.
Enjoy with yellow mustard and/or homemade ketchup without sugar.
