A pound of Pacific cod can make enough fish for two people.
Pre-heat oven to 350 degrees.
Beat one large egg in a small bowl with:
– 1/4 tsp sea salt
– 1/2 tsp pepper
– 1/2 tsp oregano
– 2 tbsp lemon juice
Coat cod in egg mixture and place in a pyrex cooking dish.
Dust cod all over with:
– 1/4 cup almond meal
– handful of small walnut pieces
Bake for 12 minutes until cooked through but not overcooked.
