Bread and a SIBO diet are usually at odds, but with this recipe you can really have it all – taste, texture and the delicious aroma that fills your house when you bake it! All of that but with zero added sugar/sweeteners, no gluten, no grains, no dairy and I add vanilla protein to boost the nutritional value a bit.
Pre-heat oven to 350 and add the following ingredients to a large mixing bowl in the order below:
- 1 cup almond meal/flour
- 1 scoop vegan, vanilla protein powder (zero additives – just pea, hemp and cranberry protein with natural vanilla flavor)
- 1/4 tsp baking soda (you can skip if you need to)
Sift those together and then add:
- 2 whole organic eggs
- 1/2 cup almond milk
Stir all together and then add:
- 2 small, super ripe bananas (or 1 large one)
Mix everything up very well and place in a pre-sprayed baking dish (I use a coconut oil spray without propellants). Place in center of the oven and bake between 26-28 minutes depending on your oven.
Remove and let it cool before slicing and enjoying! It is great for breakfast, brunch, dessert or when you just want a snack. Go bananas!
