An unbelievably deliciuos treat, this tastes and feels like real ice cream but it is completely easy on the tummy. So you can scream, “I Scream,” we all can scream “yay!” for this. My husband who is an ice cream fanatic can’t get enough of this (and he doesn’t even have an food intolerances!).
I usually use one banana per person as a serving size so this recipe below is for two people. You can add more if you are making a family portion.
Slice two medium sized, very ripe bananas into thin slices and lay separately on a sheet of wax paper on a tray or plate. Freeze the banana slices for at least five hours.
In a food processor mix the following, pausing to use a spoon to push any chunks down, until smooth:
– Frozen banana slices
– 1/4 cup unsweetened vanilla almond milk (more almond milk is more like soft serve, less is more like ice cream/gelato)
– 1/6 tsp pure vanilla extract
Spoon into dishes. Add toasted raw almond slivers or a few organic blueberries if desired.
