If they are going to process foods, it seems like making something like bone broth into a protein powder is a good thing for those with sensitive guts who also like to build muscle. Desperate for all natural snacks without added inflammatory ingredients or sugar I found that bone broth protein powder works great in these “cake-ish” bars.
This recipe has zero added sugar or sweeteners and is dairy free, gluten free, soy free! It is rich in taste and has a great consistency.
Pre-heat oven to 350 degrees.
In a medium mixing bowl combine the following ingredients in the order below:
– 1 cup almond meal
– 1 1/2 heaping scoops of bone broth protein powder (I like vanilla flavor)
– 1 tsp ground cinnamon
– 1/4 tsp baking powder
– 1/4 tsp ground ginger
(Sometimes I add a scoop of vegan protein powder and then some tumeric with a pinch of cracked black peppercorn, too.)
Stir together with a fork and then add:
– 2 organic eggs
– 1/3 cup almond milk
– 1 small ripe banana smashed
– 1/2 pureed steamed organic carrot
Stir vigorously until all ingredients are combined into smooth mixture.
Spray a bread pan (8.5″ X 4.5″ X 2.75″) with coconut oil cooking spray (I prefer ones without additives or propellants).
Pour mixture into the pan and gently shake to even it out. Put in the oven and bake between 26-28 minutes depending on your oven.
Cut into bars and store in the fridge to enjoy for breakfast, pre or post workout or for dessert any time!
