Chocolate – check, Almond Butter, – check. Sugar – NO WAY.
These little puppies are delicious, decadent and darn amazing if I do say so myself. I spent many trial and error sessions figuring out the right balance of ingredients, but I finally hit the jackpot and wanted to share. The prep and cook time also make it so quick and easy that this is just the gift that keeps on giving.
Preheat oven to 350 degrees:
- Fill muffin tin with parchment paper baking cups
- Spray cups with coconut oil or avocado oil spray so that the cups don’t stick to the tin or more importantly the chocolate
- Add 4 quarter size 100 percent cacao wafers to each cup
- Drop 4 or 5 drops of liquid pure vanilla stevia on the wafers
- Add a teaspoon of almond butter (or any nut butter works great, too! I love walnut butter) to each cup
- Sprinkle a solid pinch of stevia crystals on top of the nut butter
Place the tin in the oven for 5-6 minutes or until the chocolate has melted but is not too bubbly. Once you pull the tin out of the oven, take a fork and stir the almond butter and chocolate together. Let cool for 15 minutes and then place in the fridge for 2 hours.
